Quarantine Recipes 

As the entire world battles the COVID-19 pandemic and stays indoors, our team has found ourselves cooking a lot more. During quarantine, we have found comfort in video chatting with loved ones and sharing recipes with one another. We have cooked and baked everything from whole wheat banana peanut butter chocolate chip muffins to homemade pizza crust with various toppings. We have shared these recipes with our foodie friends in hopes of spreading love through delicious food. Below you will find a recipe for each meal that we have made during the past few weeks in quarantine. Enjoy :)

Breakfast: Banana peanut butter protein shake 

Prep time: 10 minutes 

Serving: 1 smoothie 

Ingredients: 

1 banana 

1 scoop Vanilla protein 

2 TBSP peanut butter or powdered peanut butter 

¼ cup frozen cauliflower rice 

Handful of spinach

1 cup unsweetened almond milk 

Optional add: Chia seeds, flax seed, collagen powder

Directions: Blend and drink!


Lunch: Asian Lettuce Wraps 

Prep time: 20 min

Cook time: 20 min

Ingredients: (use your judgement for quantity based on number of people eating)

Carrots 

Celery

White onion

Ground chicken

Teriyaki sauce 

Cashews 

Romaine lettuce 

Optional: scallions, mushrooms, honey

Directions: Saute ground chicken, chopped white onion, chopped celery, chopped carrots, scallions, mushroom, cashews, 5 tbs of Trader Joe’s Soyaki or any teriyaki or soy sauce . A splash of honey, romaine lettuce uncut for lettuce cups. 

Season w sesame seeds, garlic, red pepper and pepper for taste. 


Dinner: Homemade pizza crust 

Prep time: 45 min (20 min wait time for dough to rise)

Cook time: 20 min

Serving size: 1 medium-sized pizza 

Ingredients 

2 ½ cups flour 

1 Teaspoon salt

1 Teaspoon sugar

1 TBSP oil

1 TBSP Yeast

1 cup water

Add: Garlic powder, Salt, Olive oil to taste

Directions: 

Mix ingredients to make dough, wrap and let the dough sit for 20 minutes, roll out dough, add toppings and bake. Bake at 400 degrees for 20 minutes or until golden


Dessert: whole wheat banana peanut butter chocolate chip muffins

Prep Time: 25 minutes

Cook time: 20-25 minutes 

Serving size 24 muffins

5 bananas 

3 ½ cups whole wheat flour

½ cup honey

½ cup sugar 

1 cup peanut butter 

4 tbsp baking powder 

⅔ cup almond milk 

1 cup greek yogurt 

½ cup chocolate chips 

Dash of nutmeg, cinnamon & salt 

Directions: Grease the muffin tins well and fill just below the rim (leaving room for muffins to rise). Bake at 350 for 20-25 minutes.
